Do you have a pantry filled with bags of flour and cake mixes you bought during the coronavirus pandemic grocery-buying rush in March. Now, that bread is back on the shelves at local groceries, why not put that flour to use by making some quick breads that are not only tasty and healthy, but pretty and can be made quickly.
CHOCOLATE CHIP CRANBERRY BREAD
INGREDIENTS
2 cups all-purpose flour
3/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 large egg, room temperature
3/4 cup 2% milk
6 tablespoons butter, melted
1 cup fresh or frozen cranberries, halved
1 cup miniature semisweet chocolate chips
STREUSEL:
1/3 cup packed brown sugar
2 tablespoons all-purpose flour
1/8 teaspoon ground cinnamon
2 tablespoons cold butter
3/4 cup confectioners’ sugar
2 to 3 tablespoons whole milk
DIRECTIONS
Preheat oven to 325°. Line bottom of a greased 9×5-inch loaf pan with parchment; grease parchment.
In a large bowl, combine the flour, sugar, baking powder and salt. Whisk the egg, milk and butter; stir into dry ingredients just until moistened. Fold in cranberries and chocolate chips. Transfer to prepared pan.
In a small bowl, combine the brown sugar, flour and cinnamon; cut in butter until crumbly. Sprinkle over batter. Bake until a toothpick inserted in the center comes out clean, 60-65 minutes.
Cool for 10 minutes; loosen sides of bread from pan. Cool completely before removing from pan. For the glaze, mix confectioners’ sugar and 2 tablespoons milk until smooth; if needed, add additional 1 tablespoon milk to reach desired consistency. Drizzle glaze over top of bread; allow to sit 10-15 minutes before slicing.
CINNAMON SWIRL BREAD
INGREDIENTS
1/4 cup butter, softened
1-1/3 cups sugar, divided
1 large egg, room temperature
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1 tablespoon ground cinnamon
DIRECTIONS
In a large bowl, beat the butter, 1 cup sugar and egg until blended. Combine the flour, baking powder, baking soda and salt; add to egg mixture alternately with buttermilk. In a small bowl, combine the cinnamon and remaining sugar.
Pour a third of the batter into a greased 8×4-inch loaf pan; sprinkle with a third of the cinnamon sugar. Repeat layers twice. Bake at 350° for 45-50 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.
PISTACHIO QUICK BREAD
INGREDIENTS
1 package white cake mix (regular size)
1 package (3.4 ounces) instant pistachio pudding mix
4 large eggs, room temperature
1 cup sour cream
1/4 cup water
1/4 cup canola oil
1/3 cup sugar
3/4 teaspoon ground cinnamon
DIRECTIONS
In a large bowl, combine cake and dry pudding mixes. Add the eggs, sour cream, water and oil; beat until blended (batter will be thick).
Combine sugar and cinnamon. Spoon half of the batter into 2 greased 8×4-inch loaf pans; sprinkle each with 2 tablespoons cinnamon sugar. Spread with remaining batter; sprinkle with remaining cinnamon sugar.
Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.
BANANA NUT BREAD
INGREDIENTS
1/4 cup butter, softened
3/4 cup sugar
2 large eggs, room temperature
3/4 cup mashed ripe banana (about 1 large)
1/2 cup sour cream
2-1/4 cups all-purpose flour
1 teaspoon ground cinnamon
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped walnuts
Additional walnuts, semisweet chocolate chips or coarse sugar, optional
DIRECTIONS
Preheat oven to 350°. Beat butter and sugar until blended. Add 1 egg at a time, beating well after each addition. Stir in banana and sour cream. Whisk together flour, cinnamon, baking soda and salt. Add to butter mixture, stirring just until moistened. Fold in 1/2 cup walnuts.
Transfer to a greased 9×5-inch loaf pan. If desired, sprinkle with additional walnuts.
Bake until a toothpick inserted in center comes out clean, 50-60 minutes. Cool in pan 10 minutes before removing to a wire rack to cool.
LEMON BLUEBERRY BREAD
INGREDIENTS
1/3 cup butter, melted
1 cup sugar
3 tablespoons lemon juice
2 large eggs, room temperature
1-1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup 2% milk
1 cup fresh or frozen blueberries
1/2 cup chopped nuts
2 tablespoons grated lemon zest
GLAZE:
2 tablespoons lemon juice
1/4 cup sugar
DIRECTIONS
In a large bowl, beat the butter, sugar, lemon juice and eggs. Combine the flour, baking powder and salt; stir into egg mixture alternately with milk, beating well after each addition. Fold in the blueberries, nuts and lemon zest.
Transfer to a greased 8×4-inch loaf pan. Bake at 350° for 60-70 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.
Combine glaze ingredients; drizzle over warm bread. Cool completely.
