There’s a new pizza place in town. 
Milligan’s Pizza Restaurant opened their doors on Oct. 26 with a soft opening. 
“We did a soft opening because we wanted to make sure that everything was OK with the kitchen and the service,” explained Gus Koubis, owner of the restaurant. 
Koubis said the opening was great.
“We had a very good response from people even though we didn’t advertise,” he said. “We’re doing pretty good so far.”
The restaurant offers Italian food with dishes like pizza, pastas, sandwiches, salad and more. There are both gluten free pizzas and pastas on the menu as well. Takeout, curbside and dine-in options are available. 
Koubis said he and his staff comply with all COVID-19 safety guidelines, such as masking and social distancing. 
Milligan University played a role in bringing this pizza magic to the area.
“As soon as I saw the area, I liked it and I liked the beautiful university,” said Koubis. “That led me to open up this restaurant.”
Koubis, who is from Greece, said that while he attended university in New York, a pizza place was located nearby, which is where all the students would hang out. He explained that Milligan University, during his trip to Tennessee to visit a friend, reminded him of his college years. 
“When I saw the university I said the kids need to have a place to come sit and eat and study,” he said. 
Koubis previously owned a diner in Florida. 
Since his arrival in town, and opening the restaurant, Koubis said he has been met with a warm welcome.
“I was surprised because I was a new person from out of state, plus I’m from Greece originally, so I was worried, but people have been very nice and I’m very very happy here,” he said. 
While this is his first pizza restaurant, Koubis is excited for this new business, and is thankful for his fantastic team, including his general manager, John Paul Jarvis.
